We pick at a moderate Baume to highlight the aromatic intensity of grenache and explore the floral and spice spectrums of this variety. We ferment in open fermenter with a soft extraction during its ten day ferment. We then press to a selection of 3 4 year old French hogsheads for the completion of malolactic fermentation and a further six month maturation before
